Carrot and ginger soup 

Ingredients: 

500g carrots, peeled and cut 

1 onion, chopped

2 cloves of garlic, minced 

1 tablespoon fresh ginger, grated 

1 liter of vegetable stock 

Salt and pepper to taste 

2 tablespoons of olive oil 

Preparation 

In a large pot, heat the olive oil and add the onion, garlic and ginger. Cook for about 5 minutes. Add the carrots and vegetable stock. Simmer for about 20 minutes or until the carrots are tender. 

Mix everything with a blender until you get a smooth texture. Add salt and pepper to taste.
