Ingredients:
1 sweet potato, cut in cubes
1 cup boiled chickpeas
1 onion, chopped
2 cloves of garlic, minced
1 tablespoon of grated ginger
1 cup coconut juice
1 tablespoon of curry
2 tablespoons of olive oil
Salt and pepper to taste
Preparation:
Heat the olive oil in a saucepan and add the onion, garlic and ginger. Cook for about 5 minutes. Add sweet potatoes and curry. Mix well and cook for another 5 minutes.
Add the chickpeas and coconut milk. Simmer for about 20 minutes or until the sweet potatoes are tender. Add salt and pepper to taste.
