Vegan Banana Muffins

Ingredients 

2 large bananas (about 225 g), blackened and peeled 

50 ml of vegetable or sunflower oil 

65 g light brown sugar 

150 g plain flour 

2 spoons of baking powder 

2 spoons of cinnamon 

50 g mixture of dried fruits and seeds 

2 tablespoons of oatmeal 

2 tablespoons of mixed seeds 

Preparation 

Preheat the oven to 180C/160C. Mash the bananas in a medium bowl with a fork, then mix in the oil and sugar until combined. 

Add the flour, baking powder, cinnamon and dried fruit and seed mixture. Mix until well combined. 

Line a cake tin with 10-12 cake tins (the amount you need will depend on the size of the bananas) and fill them ¾ full with the mixture. Sprinkle with oats and mixed seeds. Bake for 25 minutes. Let cool on a wire rack.
