Ingredients:
1 cup quinoa, cooked
1 avocado, diced
1 cucumber, thinly sliced
1 tomato, diced
1/4 cup fresh coriander, chopped
2 tablespoons of olive oil
Juice of 1 lemon
Salt and pepper to taste
Preparation:
Mix all the ingredients in a large bowl. Add olive oil and lemon juice. Mix well and serve cold.
