Ingredients:
300 grams of flour
1 spoon of baking powder
1 tablespoon sugar (any kind)
1 teaspoon of vanilla extract
400 ml plant-based milk (such as oat, almond or soy)
1 tablespoon vegetable oil for cooking
To serve (optional)
Banana slices, blueberries, maple syrup, vegan chocolate chips, plant-based yogurt
Preparation
Whisk the flour, baking powder, sugar, vanilla extract and a pinch of salt in a bowl using a whisk until combined. Slowly pour in the milk until you get a thick, smooth batter.
Heat a little oil in a non-stick pan over medium-low heat and add 2 tablespoons of batter to the pan to make small, round pancakes. Cook for 3-4 minutes until the edges are set and bubbles appear on the surface. Flip the pancakes and cook for another 2-3 minutes until golden on both sides and cooked through. Keep warm in a low oven while you cook the remaining pancakes.
